This recipe is from my mom.  I had to write in the part about the cornbread mix over the top, but it all worked out!!  I actually made the recipe before shipping it off to its new owner and my family loved it!

This recipe is one that I make often and can be added to or just made the way it is stated on the recipe card.  I love this recipe as I hate rolling tortillas for enchiladas and I find this feeds more people.
